Mother'S Fresh Apple Cake
- 1&1/4 cups salad oil (Mother specified Crisco oil)
- 2 cups sugar
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon soda
- 2 teaspoons baking powder
- 1 teaspoon vanilla
- 2&1/2 cups flour
- 1 cup chopped pecans
- 3 cups raw apples - cut into "pea-sized" pieces
- 1. Cut up apples and set aside
- 2. Measure salad oil into mixing bowl.
- 3. Add sugar, eggs, vanilla and mix well at low speed until creamy smooth.
- 4. Sift flour and measure.
- 5. Sift again with salt, soda, and baking powder.
- 6. Add flour mixture to creamed mixture in small amounts.
- 7. Beat well after each addition.
- 8. When batter becomes stiff, remove beaters & finish mixing by hand.
- 9. Fold in chopped nuts and apples last. Mix well.
- 10. For layers - 350 degrees for 40 to 45 minutes.
- Tube pan - start at 300 degrees for 30 minutes then 250 for 2 hours or until done.
