Gluten Free Banana Bread

  1. 350 degree oven. grease 9x5 inch loaf pan.
  2. 1. arrange bananas in a row on baking sheet lined with foil. pierce top of each banana 6 times. Roast 15 minutes or until skin is black and bulging with juices oozing from vents.
  3. 2. Remove from oven, let cool. remove from skin and mash (should equal 1 1/2 c).
  4. 3. Combine flour, sugar, baking powder and salt. Add butter and mix on low until blended. Add eggs and mix until smooth. Gradually add buttermilk and increase mixer to high until batter is light and fluffy. Add banana, vanilla and pecans. Stir to blend and pour in loaf pan. Loosely cover with foil. Bake 1 hour and 15 minutes.
