Summer Breakfast Parfait
- 1 cup Vermont Morning Multi-Grain Hot Cereal - dry, not cooked
- 1 cup non-fat plain yogurt
- 1/4 apple, cored, chopped
- 1/2 banana, sliced
- 12 grapes, cut in half (or not)
- Try your other favorite fruits, fresh or dried.
- Milk (optional)
- Mix the dry cereal grains with the yogurt, cover and refrigerate overnight. (An option is to add dried fruit at this point so they soak up the moisture from the yogurt as well as the grains.)
- In the morning, scoop out your serving size and top with your favorite sliced / chopped fresh fruit. Adding a bit of milk will make it smoother. For plain yogurt, you may want to sweeten it with a bit of honey or sugar-free sweetener. I love the interplay of tart and sweet and don't add anything but friut!
