Japanese Fruit Cake
- 1 c. butter (2 sticks)
- 2 c. sugar
- 4 eggs (room temperature)
- 1 c. buttermilk
- 1 tsp. vanilla flavoring
- 1 tsp. soda
- 1/2 tsp. salt
- 3 c. plain flour
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1 c. chopped nuts
- 1 whole apple, peeled and grated (may add this to the white layers also, makes cake very moist)
- 1 c. raisins, soaked in bourbon overnight (do not drain)
- Cream butter and sugar gradually; add vanilla. Sift flour, salt and soda together. Add the eggs, one at a time, to the batter mixture. Add flour and milk alternately using some flour last. Pour half of mixture into 2 greased and floured cake pans. Bake at 300u0b0 until done.
