Crock-Pot Stuffed Peppers
- 6 large or 8 medium green peppers
- 1 lb. ground lean beef
- 1/3 c. minced onion
- 1/2 c. chopped celery
- 1 c. instant rice
- 1/2 c. milk
- 1 (10 oz.) can tomato soup
- 1 soup can water
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. chili powder
- Cut tops off of peppers.
- Remove stems and set tops aside to use later.
- Clean out peppers.
- Brown ground beef and remove grease.
- Add onion, celery, rice, milk, egg, salt, pepper and chili powder to ground meat and mix well.
- Stuff peppers with mixture.
- In pot, combine tomato soup and water.
- Place pepper tops in bottom of pot and set stuffed peppers on top of them to prevent peppers from spilling.
- Cover and simmer on high for 2 hours.
- Spoon sauce over peppers when serving.
