Pork Chops And Sweet Potatoes

  1. Heat oil in large skillet; add pork chops.
  2. Cook 3 to 4 minutes slowly on each side or until brown.
  3. Remove chops from pan.
  4. Drain pineapple, reserving juice.
  5. Add 1/2 cup of pineapple juice, brown sugar, salt and cinnamon to drippings and mix well. Add sweet potatoes; turn to coat with liquid.
  6. Return pork chops to pan.
  7. Bring to a boil.
  8. Reduce heat to low and simmer 20 minutes or until chops are tender.
  9. Stir in pineapple and green pepper.
  10. Simmer 10 minutes.
  11. Transfer chops to warm platter.
