Pork Chops And Sweet Potatoes
- 1 Tbsp. vegetable oil
- 4 pork chops (1/2-inch thick)
- 1 (20 oz.) can pineapple chunks in juices
- 3 Tbsp. brown sugar
- 1/2 tsp. salt
- 1/2 tsp. ground cinnamon
- 2 medium sweet potatoes, peeled and sliced in 1-inch slices
- 1 medium green pepper, cut in small pieces
- 1 Tbsp. cornstarch
- Heat oil in large skillet; add pork chops.
- Cook 3 to 4 minutes slowly on each side or until brown.
- Remove chops from pan.
- Drain pineapple, reserving juice.
- Add 1/2 cup of pineapple juice, brown sugar, salt and cinnamon to drippings and mix well. Add sweet potatoes; turn to coat with liquid.
- Return pork chops to pan.
- Bring to a boil.
- Reduce heat to low and simmer 20 minutes or until chops are tender.
- Stir in pineapple and green pepper.
- Simmer 10 minutes.
- Transfer chops to warm platter.
