Chicken Roll-Ups
- 6 medium chicken breast halves
- 3 Tbsp. olive oil
- 1 tsp. dried oregano
- salt
- 1 medium cucumber
- 8 oz. plain yogurt or sour cream
- 1 clove garlic, minced
- 6 - 6 or 8 inch pitas
- 2 large onions, thinly sliced
- 1 c. thinly sliced iceberg lettuce
- Forty-five minutes before serving, cut breast into one inch chunks. In a bowl toss with oil, oregano, and 1 tsp. salt.
- Set aside. Peel cucumber and cut lengthwise in half.
- With a spoon, scrap out seeds.
- Coarsely shred cucumber and mix with yogurt, garlic, and 1 tsp. salt.
- Warm pitas in foil at 300 degrees.
- Over medium high heat, cook chicken until lightly browned.
- Remove chicken from pan.
- Saute onions about 10 minutes.
- Spread cucumber mixture, chicken, and onion on pitas.
- Roll and wrap with foil
- Serves six.
