Peanut Butter Chocolate Bars

  1. Generously butter a 9x13-inch baking pan. In a large bowl, combine the cereal, peanut butter, powdered sugar, 1/2 cup of the butter and vanilla. (I find using my hands works the best.) Press the mixture into the prepared baking pan. In a small saucepan (or double boiler) melt together the chocolate chips and the remaining 2 tablespoons of butter, stirring constantly. Remove from the heat. Spread the chocolate mixture over the top of the peanut butter mixture. Set aside for 1 to 2 hours to set. I usually refrigerate if it's warm out. It also hardens the bars slightly which I like.
