Crispy Salmon
- For the Salmon
- Salmon Filletst4 (skin on)
- Olive Oil
- Salt
- Basil/Thymeta small handfull (chopped)
- For the Crab Mash
- New Potatoest8 par boiled and peeled
- Olive Oil
- Spring Onionst2 chopped
- Salt & Pepper
- Vinaigretteta drizzle
- Coriandert1/4 cup
- Crab Meatt200 g
- For the Vinaigrette
- Olive Oilt3.5 tablespoons
- Lemon Juicet1 tablespoon
- Salt & Pepper
- Watert1 teaspoon
- For the Crab Mash
- 1. Pour a little oil in a pan
- 2. Add the peeled & par boiled potatoes and heat them up
- 3. Remove and crush gently with a fork to absorb the olive oil
- 4. Chop and add the spring onions
- 5. Add the crab meat
- 6. Mix it all together
- 7. Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)
- 8. Add some freshly chopped coriander
- 9. Mix together
- For the Crispy Salmon
- 1. Roll the fish up and score/slice into the meat through the skin
- 2. Season with salt & pepper and stuff with fresh thyme or basil
- 3. Heat the oil and when it begins to smoke, add the salmon
- 4. Leave and turn once
