Crispy Salmon

  1. For the Crab Mash
  2. 1. Pour a little oil in a pan
  3. 2. Add the peeled & par boiled potatoes and heat them up
  4. 3. Remove and crush gently with a fork to absorb the olive oil
  5. 4. Chop and add the spring onions
  6. 5. Add the crab meat
  7. 6. Mix it all together
  8. 7. Drizzle with a basic vinaigrette (mix the vinaigrette ingredients together)
  9. 8. Add some freshly chopped coriander
  10. 9. Mix together
  11. For the Crispy Salmon
  12. 1. Roll the fish up and score/slice into the meat through the skin
  13. 2. Season with salt & pepper and stuff with fresh thyme or basil
  14. 3. Heat the oil and when it begins to smoke, add the salmon
  15. 4. Leave and turn once
