Sour-Apple Vinaigrette Chicken
- 4 large chicken breasts, cut in half (shortways)
- salt and pepper
- Vinaigrette:
- About 1 tbsp combined chopped fresh thyme, rosemary and sage in equal parts
- 1/2 lemon's juice
- 1 large garlic clove, chopped fine
- 1/2-1 tsp Dijon mustard
- 1 tbsp balsamic vinegar
- 1/4 sour green apple, diced
- 1/2 cup low sodium chicken broth
- Pinch of salt
- 4 tbsp olive oil
- 1/2 large yellow onion, diced
- Clean and trim the halved chicken breasts. Pat dry. Salt and pepper both sides.
- Assemble vinaigrette in small a bowl.
- In a large skillet, heat oil on med-high heat. Add onions and saute 2-3 minutes. Push onions to the edge of the pan and arrange chicken in the skillet. Let the chicken quickly sear about 2 minutes on each side.
- Add vinaigrette and lower to medium heat. Allow to simmer until chicken juice runs clear. Remove chicken from skillet and cover it with foil. While smushing apples and onions gently with your spatula, continue to simmer the vinaigrette until it reduces. Add the juices that have since seeped out of the chicken breasts to the sauce.
- Serve chicken topped with vinaigrette.
