King Ranch Chicken (Enchilada Pie)
- 1 small hen or large fryer or 2 lb. ground beef, cooked and drained
- 1 medium size onion, chopped
- 1 medium size bell pepper, chopped
- 1/2 c. chopped ripe olives
- 1 small jar pimentos, chopped or diced
- 1 pkg. tortillas
- 1 can cream of mushroom or cream of chicken soup
- 1 can taco sauce
- salt, pepper and chili powder to taste
- 1/2 lb. Cheddar cheese, grated
- Boil hen until tender; debone and cut into small pieces.
- Mix with onions, bell pepper and pimentos.
- Wilt tortillas in chicken broth (reserved from boiling hen).
- Place in 9 x 13-inch greased Pyrex dish.
- Alternate with the chicken mixture.
- Mix the soup with taco sauce.
- Season with pepper and chili powder.
- Pour over chicken and tortillas.
- Sauce may be thinned with chicken broth, if desired.
- Top with cheese.
- Bake at 350u0b0 for 1 hour.
