King Ranch Chicken (Enchilada Pie)

  1. Boil hen until tender; debone and cut into small pieces.
  2. Mix with onions, bell pepper and pimentos.
  3. Wilt tortillas in chicken broth (reserved from boiling hen).
  4. Place in 9 x 13-inch greased Pyrex dish.
  5. Alternate with the chicken mixture.
  6. Mix the soup with taco sauce.
  7. Season with pepper and chili powder.
  8. Pour over chicken and tortillas.
  9. Sauce may be thinned with chicken broth, if desired.
  10. Top with cheese.
  11. Bake at 350u0b0 for 1 hour.
