Miss Priss' Banana Bread
- 3 cups-All purpose flour
- 1/2 tsp.-Baking soda
- 1/2 tsp.-baking powder
- 3/4 cup- softened salted butter(important for flavor quality)
- 8 oz or one block softened cream cheese
- 2 cups- sugar or Splenda
- 2 Large eggs
- About 4 mashed ripe bananas( can still be yellow and taste great)
- 1/2 tsp.-vanilla extract or almond extract(both are great)
- 3/4 cups-chopped walnuts(optional and adjustable)
- Topping:
- 1/2 cup-brown sugar
- 1/2 cup-walnuts
- 1 tbs-flour
- 1/4 tsp- cinnamon
- Preheat oven 350 F.
- Grease and flour two 8x4 loaf pans
- In a large bowl wire whisk first three dry ingredients.
- In another large bowl cream butter&sugar with hand mixer
- Then blend in cream cheese until smooth
- Add one egg at a time and mix
- Fold dry mixture in.
- After mixed add in mashed bananas.
- Add walnuts.
- Divide mixture evenly between two loaf pans.
- Now mix your topping ingredients gently with a fork. Sprinkle evenly over the two loaves.
- Bakes for an hour to an hour and 15 minutes.
- Note: this bread freezes well.
