Corn Bread Tamale Pie
- 1 lb. ground beef
- 1 chopped onion
- 1 can tomato soup
- 1 c. water
- 1/4 tsp. pepper
- 1 tsp. salt
- 1 Tbsp. chili powder
- 1 c. whole kernel corn
- 1/2 c. chopped green pepper
- 3/4 c. corn meal
- 1 Tbsp. flour
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 beaten egg
- 1/3 c. milk
- 1 Tbsp. cooking oil
- Preheat the oven to 425u0b0.
- Saute together the ground beef and onion.
- When the meat is lightly browned, add the soup, water, pepper, 1 teaspoon salt, chili powder, corn and green pepper. Simmer all together for 15 minutes.
- Meanwhile, mix together the corn meal, flour, sugar, 1/2 teaspoon salt and baking powder. Moisten with egg and milk.
- Mix lightly and fold in the cooking oil.
- Place meat mixture in a greased 2-quart casserole and cover with the corn bread topping.
- (When I'm in a hurry, I omit the last 3 steps and just use a Jiffy boxed corn bread mix.)
- Place in oven and bake for about 20 to 25 minutes or until corn bread is brown.
