Spicy Tomato-Fish Chowder
- 4 tsp. olive oil
- 2 cloves garlic, minced
- 3 medium ripe tomatoes, peeled, cored, seeded and chopped or 1 can (large) low-salt tomatoes, chopped (with juice)
- 1 tsp. basil (dried), crumbled
- 2 Tbsp. minced parsley
- 1/2 tsp. dried oregano, crumbled
- pinch of cayenne pepper
- 1/2 c. dry white wine or chicken broth
- 3 c. water
- 1/2 lb. cod or haddock, cut into bite size pieces
- shrimp, cleaned
- crab meat
- Heat the olive oil over moderate heat; add the garlic, tomatoes, basil, oregano, cayenne pepper and wine.
- Cook, uncovered, for 10 minutes. Add the water. Cover and bring to a simmer, about 3 minutes.
- Mix in the cod and shrimp and cook, uncovered, about 5 minutes longer.
- Ladle into bowls and add a tablespoon or two of fresh crab meat.
- Sprinkle with parsley.
