Dot'S Pot Roast

  1. Saute one large rough chopped onion in olive oil
  2. Add 5 to 7 pound roast
  3. Brown meat the meat.
  4. Add salt, pepper, garlic and Accent
  5. (I never use the Accent)
  6. When roast is brown on both sides add:
  7. Boiling water to cover 1/3 of meat
  8. 1/2 can of beer
  9. Cover and simmer for 3 hours.
  10. Stir occasionally and watch water level.
  11. Add peeled potatoes, carrots and celery.
  12. Add water as needed.
  13. Cook covered until vegetables are done.
  14. Removing the lid will help brown potatoes.
  15. You can also add Kitchen Bouquet to increase brownness. (I rarely use this.)
