Dot'S Pot Roast
- 1 large onion
- 5-7 pound roast
- Salt
- Pepper
- Garlic
- Accent (optional)
- 1/2 Can Beer
- Kitchen Bouquet (Optional)
- Potatoes
- Carrots
- Celery
- Saute one large rough chopped onion in olive oil
- Add 5 to 7 pound roast
- Brown meat the meat.
- Add salt, pepper, garlic and Accent
- (I never use the Accent)
- When roast is brown on both sides add:
- Boiling water to cover 1/3 of meat
- 1/2 can of beer
- Cover and simmer for 3 hours.
- Stir occasionally and watch water level.
- Add peeled potatoes, carrots and celery.
- Add water as needed.
- Cook covered until vegetables are done.
- Removing the lid will help brown potatoes.
- You can also add Kitchen Bouquet to increase brownness. (I rarely use this.)
