Sweet Potato With Gruyere Cheese Sandwich
- 1 1/2 T. Extra Virgin Olive Oil.
- 1/2 large Red Sweet Pepper, seeded and sliced into thin rounds.
- 1 Med. Sweet Potato, peeled & sliced lengthwise into 1/8" slices.
- 1 Med. Yellow Onion, sliced thinly.
- 3 Cloves of Garlic
- Gruyere Cheese sliced thinly to cover two pieces of bread.
- 1 1/2 T. Flavored Hummus
- Salt & Pepper to taste.
- 4 slices of whole wheat bread.
- Place the potato into a microwave proof dish, with a lid, and microwave until tender (I use a potato setting). Remove from the dish and set aside. Place the onion & red pepper into the clean dish and microwave until tender (I use the fresh vegetable setting).
- Place the oil in a 12" fry pan and heat over med. low until warm. Add the pepper & onions and saute for 5 minutes, stirring occasionally. Add the garlic and saute for 2 minutes. Add the sweet potato and cook for five minutes, stirring occasionally.
- Meanwhile, toast the bread and spread the hummus on 2 slices. Warm the broiler.
- Place the two slices of bread onto a cooking sheet, cover with the potato, onion, pepper mix, salt & pepper, and top each with cheese. Broil until the cheese melts, remove, cover with the remaining bread, cut in half, and serve.
