Shrimp & Grains Sweetened Ginger & Red Curry Style
- 1-cup veggie broth
- 1-cup water.
- 1-cup grain (brown rice, red rice, and mixed grains)
- 4-6 shallots
- 2-4 jalapeno peppers
- Half bunch green onion
- 1 lb jumbo shrimp (peeled)
- 4-6 tablespoons ginger syrup
- 2-4 tablespoons red curry paste
- 1-tablespoon fish sauce
- 1/4 cup shrimp shell stock
- In a heavy pot add 1-cup veggie broth & 1-cup water. Add 1-cup rice mixture. Add lightly copped shallots, jalapeno and green onion. Bring to boil then simmer on low.
- Place shrimp shells in 1/4 cup water boiled water.
- Add peeled shrimp to pot
- Add ginger syrup, add red curry paste, and add fish sauce and shell stock to pot. Cover and place in oven.
- Let bake for about 10 minutes. Turn off oven. Let sit for about 5 more minutes. Remove and serve.
