Orange Crunchies
- 1 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 c. shortening, soft
- 2/3 c. sugar
- 1 egg
- 1/4 c. evaporated milk
- 3 c. corn flakes
- 1/2 c. coarsely chopped nuts
- 1 tsp. grated orange rind
- Sift together flour, baking powder and salt; set aside.
- Put into bowl soft shortening.
- Add sugar gradually, mixing well until light and fluffy.
- Add egg and beat hard.
- Stir in about half of flour mixture.
- Stir in milk.
- Add the remaining flour and mix well.
- Fold in corn flakes, nuts and orange rind.
- Drop from teaspoon onto greased baking sheet about 2 inches apart.
- Bake on oven rack slightly above center at 325u0b0 for 15 minutes or until light brown.
- Watch closely while baking.
- Remove from oven baking sheet at once.
- Makes about 4 dozen cookies.
