Black & Blue Cobbler
- Crust:
- 1/2 cup Toasted Pecans
- 1 3/4 cup Flour
- 1/2 cup Brown Sugar
- 2 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 cup Butter, diced
- 2/3 cup Sour Milk
- 4 cup Blue Berries
- 4 cup Black Berries
- Topping:
- 3/4 cup Sugar
- 1/4 tsp Salt
- 2 tsp Lemon Peel, finely grated
- 1 tsp Fresh Ginger, finely grated
- 3 tbs Lemon Juice mixed with
- 2 tbs Cornstarch
- 1 tbs Whipping Cream
- 1 tbs Sugar
- Whipped Cream
- Process pecans thru butter until smooth. Add milk.
- Press into baking pan.
- Top with berries.
- Thoroughly mix sugar thru ginger.
- Add juice mixture.
- Spread on top of berries.
- Combine cream and sugar.
- Brush on topping.
- Bake 375 25 min.
- Loosely cover with foil. Bake 15 min.
- Remove foil and cool 20 min.
- Top with Whipped Cream
