Grandma'S Kipfuls

  1. Prepare the Dried Apricot Jam ahead (it takes several hours to soften the apricots and cook down). Soak 0.5 lb of dried apricots over night, then boil in the same liquid until almost all the liquid is absorbed. Mash well (with a potato masher) and add 1 cup of sugar and cook until the jam is thick, watching carefully because this jam will burn easily. Brown sugar works well with the jam and gives it a richer flavor, but does make it darker.
  2. Prepare the yeast mixture and let is sit for 15-20 minutes to activate the yeast.
  3. Combine the dough ingredients, with the first 4 cups of flour, and mix well. Once it is smooth, add the remaining flour and mix until smooth. Grease top of dough with butter and let rise. Work down and let the dough rise again.
  4. Put dough on lightly floured board and roll to approximately 1/2 inch thickness. Spread softened butter over the entire dough and fold in thirds, spreading butter on each fold. Let dough sit for 20 minutes and repeat.
  5. Roll dough to approximately1/4 inch thickness and cut into 2 inch squares. Put 1-2 tablespoons of Dried Apricot Jam in center of each square and fold. Sprinkle top of kipful with a cinnamon sugar mixture and place on a baking sheet. Cover and let stand for 20 minutes. Then bake at 400 degrees until brown - about 20 min.
  6. These also work well with bacon (already cooked) and cheese as the filling.
