Jalapeno Sweet Potatoe Puff

  1. super simple.
  2. first peel, then bake the sweet potatoes at 350 for half and hour to 45 minutes.
  3. prepare the topping while the baking goes down. by mixing all four ingredients in a bowl until thoroughly mixed.
  4. put cooked sweet potatoes into a stand mixer with the flat beater. add remaining ingredients and blend on speed 2 or 3 for five minutes. (sugar may be omitted)
  5. turn oven temperature up to 400.
  6. put mixture into oven safe dish and cover it with the topping.
  7. bake time:
  8. 20 min. covered with foil
  9. 10 min. no foil to crunch/brown it up.
