Jalapeno Sweet Potatoe Puff
- taters:
- 6 sweet potatoes
- 1 c. light cream
- 1/3 c. sugar
- 4 eggs
- 4 tbsp. butter
- 1 small/med jalapeno chopped finely
- topping:
- 4 tbsp melted butter
- 1/2 cup brown sugar
- 1 c. corn flakes
- 1/2 c. pecans
- bake it off @ 400
- 20 min. covered with foil
- 10 min. no foil to crunch/brown it up.
- super simple.
- first peel, then bake the sweet potatoes at 350 for half and hour to 45 minutes.
- prepare the topping while the baking goes down. by mixing all four ingredients in a bowl until thoroughly mixed.
- put cooked sweet potatoes into a stand mixer with the flat beater. add remaining ingredients and blend on speed 2 or 3 for five minutes. (sugar may be omitted)
- turn oven temperature up to 400.
- put mixture into oven safe dish and cover it with the topping.
- bake time:
- 20 min. covered with foil
- 10 min. no foil to crunch/brown it up.
