Oriental Beef And Peppers
- 12 oz. flank steak
- 3 Tbsp. oil
- 1 large green bell pepper, sliced
- 1 large red bell pepper, sliced
- 1 onion, sliced
- 2 Tbsp. oil
- 3 Tbsp. soy sauce
- 3 Tbsp. water
- 2 tsp. cornstarch
- 1 tsp. ginger
- 1/8 tsp. pepper sauce
- Cut steak cross-grain into very thin slices.
- Heat 10-inch browning dish in microwave on High for 3 minutes.
- Add 3 tablespoons oil, bell peppers and onion; mix well.
- Microwave, covered with glass lid, on High for 3 minutes, stirring once. Remove vegetables from browning dish; set aside.
- Add 2 tablespoons oil and steak to browning dish; stir to coat well.
- Arrange in even layer in browning dish.
- Microwave 1 1/2 minutes.
- Add mixture of soy sauce, water, cornstarch, ginger and pepper sauce; mix well. Add vegetables.
- Microwave, covered, on High for 2 minutes, stirring once.
- Serve over fluffy rice.
- Yields 4 servings.
