Oatmeal Cake
- 11/4 cups boiling water
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup canola oil
- 1 cup granulated white sugar
- 2 eggs
- 1 tsp. vanilla extract
- Powdered sugar
- 11/4 cups white flour + 2 tsp. white flour
- 1 tbsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1. Mix boiling water, oats and brown sugar in a mixing bowl and let stand for 5-10 minutes
- 2. Cream oil, white sugar, eggs and vanilla using a mixer in another bowl
- 3. Mix flour, baking powder, salt, cinnamon and nutmeg.
- 4. Mix the above three sets of ingredients in a large mixing bowl until reasonably smooth.
- 5. Preheat oven to 350 degrees fahrenheit.
- 6. Grease a 9"x13" baking dish.
- 7. Pour batter into baking dish and bake for 25-30 minutes.
- 8. When done, sprinkle with powdered sugar and let cool.
- 9. Cut into desired serving size.
