Bacon Ranch Pasta Salad
- 6 slices bacon
- 2 cups uncooked shell pasta
- Drizzle of olive oil
- 2/3 cup mayonnaise
- 1/2 teaspoon onion powder
- 3 tablespoons (or 1 packet) dry ranch dressing mix
- Splash of milk
- 1/2 cup petite frozen peas
- Grape tomatoes
- Grated extra sharp cheddar cheese, if desired
- Cook the bacon until crisp; remove and drain on paper towel, chop and set aside. Prepare pasta according to package directions; rinse and drain. Toss with just enough olive oil to lightly coat the pasta.
- Mix together mayonnaise, onion powder, and ranch dressing mix. Add a splash of milk and stir until creamy. Stir dressing mix into cooked pasta. Add crumbled bacon, peas and tomatoes and gently stir to combine.
- Cover and refrigerate for several hours or overnight before serving.
