Sweet Potato Hash
- 2 medium sweet potatoes
- 1/2 large yellow onion
- 1 package (12 - 16 oz) of sweet Italian turkey sausage
- 1 tbsp olive oil
- 1/2 tsp of rosemary
- dash of salt and pepper
- 1. Start a medium pot of boiling water.
- 2. Dice the yellow onion and cut the sweet potatoes into small cubes.
- 3. Remove the sausage from any casing and place it in a skillet with the olive oil.
- 4. Cook the sausage over medium heat for approximately 6 minutes or until it starts to brown.
- 5. Add the sweet potatoes to the pot of boiling water and boil for 6 - 8 minutes.
- 6. Add the diced onion to the sausage in your skillet and cook on medium heat for 6 - 8 more minutes or until the onion starts to caramelize.
- 7. Drain the sweet potatoes and add them to the sausage and onion mix in the skillet.
- 8. Add in the rosemary, salt, and pepper.
- 9. Let cook over medium heat for 10 more minutes, stirring throughout.
- 10. Let slightly cool and serve.
