Sweet Potato Hash

  1. 1. Start a medium pot of boiling water.
  2. 2. Dice the yellow onion and cut the sweet potatoes into small cubes.
  3. 3. Remove the sausage from any casing and place it in a skillet with the olive oil.
  4. 4. Cook the sausage over medium heat for approximately 6 minutes or until it starts to brown.
  5. 5. Add the sweet potatoes to the pot of boiling water and boil for 6 - 8 minutes.
  6. 6. Add the diced onion to the sausage in your skillet and cook on medium heat for 6 - 8 more minutes or until the onion starts to caramelize.
  7. 7. Drain the sweet potatoes and add them to the sausage and onion mix in the skillet.
  8. 8. Add in the rosemary, salt, and pepper.
  9. 9. Let cook over medium heat for 10 more minutes, stirring throughout.
  10. 10. Let slightly cool and serve.
