Autumn Vegetable And Chicken Pasta
- 1/2 c. red onion, chopped (small onion)
- 2 T. olive oil
- 2 breasts of chicken, cubed
- 1 large zucchini, chunked
- 1 bag spinach
- 1 c. chicken broth (low sodium, if possible)
- 2 T. honey
- 1/4 c. Coca-Cola
- 1/4 tsp. cayenne pepper
- 1/4 tsp. oregano
- 1/2 tsp. garlic powder
- seasoned salt, to taste
- 1 pkg. brown rice pasta, spaghetti style
- Saute onion in olive oil until soft. Add chicken and cook until chicken is golden in color. Add zucchini. Season with spices: cayenne pepper, oregano, garlic powder and seasoned salt. Drizzle honey on top, stir well. Add Coke, broth and spinach. Cover and cook on medium heat until reduced to a thickened sauce, stirring occasionally. Cook rice pasta to package instructions. Drain. Toss in chicken and vegetable mixture. Serve hot. **Note: If desired, substitute white pasta; however, the flavor of the rice pasta complements the sauce and vegetable flavors.
