Veal Scallops With Apples
- 2 apples
- 1 1/4 lb veal scallops ( from loin)
- 6 ozs chicken stock or canned broth
- 2 tablsps oil
- Peel core and seed apples Save peels
- Slice the apples in half and cut each half into very thin slices.
- Put the apples in a baking dish moisten with tiny drop of oil and bake at 400 degree oven till tender
- Meanwhile S & P veal. Add remaining oil to saute pan and heat over high heat. Saute the meat with apple peels until nicely colored about 3 to 4 mins. Discard the peel
- Transfer the veal and oil to a shallow casserole Continue to cook for 5 mins in 400 degree oven
- Remove the meat from the casserole and keep warm Pout stock into a saucepan and boil down by 1/3 Strain into a bowl or measuring cup
- To serve, pleace veal scallops on individual serving plates and garnish with apples arranged in a fan shape around the veal Pour small amount of reduced cooking liquid over each serving 360 calories per serving
