Veal Scallops With Apples

  1. Peel core and seed apples Save peels
  2. Slice the apples in half and cut each half into very thin slices.
  3. Put the apples in a baking dish moisten with tiny drop of oil and bake at 400 degree oven till tender
  4. Meanwhile S & P veal. Add remaining oil to saute pan and heat over high heat. Saute the meat with apple peels until nicely colored about 3 to 4 mins. Discard the peel
  5. Transfer the veal and oil to a shallow casserole Continue to cook for 5 mins in 400 degree oven
  6. Remove the meat from the casserole and keep warm Pout stock into a saucepan and boil down by 1/3 Strain into a bowl or measuring cup
  7. To serve, pleace veal scallops on individual serving plates and garnish with apples arranged in a fan shape around the veal Pour small amount of reduced cooking liquid over each serving 360 calories per serving
