Quick Beef With Broccoli Stir-Fry

  1. Trim fat from steak.
  2. Slice steak diagonally across grain into thin strips.
  3. Combine tomatoes and water.
  4. Let stand 5 minutes. Drain and slice thinly.
  5. Break broccoli flowerets.
  6. Slice green onions.
  7. Mince garlic.
  8. Cook rice according to package directions. Combine cornstarch, juice or wine and soy sauce; stir well.
  9. Coat a wok with vegetable cooking spray; place over medium-high heat until hot.
  10. Add steak; stir-fry 2 minutes.
  11. Remove steak from wok; set aside.
  12. Add oil to wok; heat to hot.
  13. Add broccoli; stir-fry 3 minutes.
  14. Add tomatoes, green onions and garlic; stir-fry 1 more minute.
  15. Add cornstarch mixture and beef to wok; stir-fry 1 minute or until sauce is thickened and bubbly.
  16. Serve over rice.
  17. Yield: 4 servings.
