Sweet And Sour Pork(Microwave)

  1. In 3-quart casserole, combine oil and carrots.
  2. Cook 5 minutes. Stir in pork, onion, red and green pepper.
  3. Cover and cook 3 minutes.
  4. Drain pineapple (save juice; 1/2 cup).
  5. In a clean bowl add 1/2 cup juice to cornstarch; stir until dissolved.
  6. Stir in all remaining ingredients to make sauce.
  7. Add sauce to the pork mixture.
  8. Stir to mix.
  9. Cover and cook on medium 10 to 17 minutes. Stir twice until sauce is thickened and pork is done.
  10. Serve over rice.
