Sweet And Sour Pork(Microwave)
- 4 carrots, thinly sliced on the diagonal
- 3 Tbsp. oil
- 1 large onion, sliced
- 2 lb. boneless pork, cut in 2-inch cubes
- 1 green bell pepper, cut in 1-inch squares
- 1 red bell pepper, cut in 1-inch squares
- 1 (16 oz.) can unsweetened pineapple chunks
- 1/4 c. cornstarch
- 1/4 c. white wine vinegar
- 1 Tbsp. Worcestershire sauce
- 1/4 tsp. pepper sauce
- In 3-quart casserole, combine oil and carrots.
- Cook 5 minutes. Stir in pork, onion, red and green pepper.
- Cover and cook 3 minutes.
- Drain pineapple (save juice; 1/2 cup).
- In a clean bowl add 1/2 cup juice to cornstarch; stir until dissolved.
- Stir in all remaining ingredients to make sauce.
- Add sauce to the pork mixture.
- Stir to mix.
- Cover and cook on medium 10 to 17 minutes. Stir twice until sauce is thickened and pork is done.
- Serve over rice.
