Fruity Chicken Salad
- 2 cans (10 ounces each) chunk white chicken in broth, drained
- 1/2 cup reduced-fat mayonnaise
- 1/2 cup red seedless grapes, each cut in half
- 1/3 cup chopped celery
- 1/4 cup sliced almonds, toasted (toasting optional)
- Salt and pepper, to taste
- 1 can (15 ounces) Mandarin oranges, drained
- Preparation Time: Approximately 10 minutes
- Preparation:
- Combine chicken and mayonnaise in a medium bowl. Stir in grapes, celery and almonds. Season to taste with salt and pepper. Just before serving, gently stir in oranges.
