Three Cheese Bacon Mac N Cheese
- 2 cups Penne Pasta (2 cups dry)
- 8 Strips of Bacon
- 2 TBS Butter
- 2 TBS Flour
- 1 cup 1% milk
- 1 1/2 cups of Cheddar Cheese
- 1/3 cup Asiago Cheese
- 1/3 cup Parmesan Cheese
- Salt to taste
- A few pinches of Cayenne Pepper
- Bread Crumbs
- Preheat oven to 325.
- Cook the pasta in boiling water over high heat until al dente. Drain and set aside. Cook bacon until crispy and fully cooked, crumble and set aside.
- Melt butter over medium heat then add flour and whisk until blended smoothly. Add milk and whisk vigorously until fully blended and thick. Turn heat to medium-low and cook until thick and bubbly. Add all cheeses, salt, and Cayenne pepper. Stir until cheeses are melted and blended. Add pasta and bacon to the cheese mixture and gently fold until thoroughly mixed.
- Pour into a baking dish and top with bread crumbs. Cook in the oven until bread crumbs are golden brown.
