Black Cod Provencale

  1. Combine fish sauce, sherry, sugar, water, herb du provence & pounded garlic in sauce pan
  2. Bring to gentle boil and simmer for 6 minutes
  3. strain off sauce (sauce 1) and add sherry vinegar to sauce
  4. return herbs and garlic to sauce pan and add another 1/4 cup water
  5. bring to simmer for another 6 minutes till reduced till half
  6. strain off sauce (sauce 2)
  7. pour sauce 1 over fish and
  8. steam for 10 minutes on high steam
  9. Plate each piece of fish with it's sauce
  10. Cover with layers of basil, parsley and dill
  11. top with fried shallots
  12. Add sauce 2 if more sauce needed
