Black Cod Provencale
- 3/4 pounds Black cod (2pieces)
- 2 tablespoon Fish sauce
- 2 tablespoon Sugar
- 4 tablespoon Sherry
- 1/2 tablespoon dried herb du provence
- 2 cloves garlic
- 1 teaspoon Sherry vinegar
- 10 pieces fresh basil leaves
- 20 pieces parsley leaves
- 1/4 cup fresh dill
- 1/4 cup water
- Combine fish sauce, sherry, sugar, water, herb du provence & pounded garlic in sauce pan
- Bring to gentle boil and simmer for 6 minutes
- strain off sauce (sauce 1) and add sherry vinegar to sauce
- return herbs and garlic to sauce pan and add another 1/4 cup water
- bring to simmer for another 6 minutes till reduced till half
- strain off sauce (sauce 2)
- pour sauce 1 over fish and
- steam for 10 minutes on high steam
- Plate each piece of fish with it's sauce
- Cover with layers of basil, parsley and dill
- top with fried shallots
- Add sauce 2 if more sauce needed
