Cheesy Cauliflower
- 1 HEAD OF CAULIFLOWER
- 3 TBS OLIVE OIL
- 1 LARGE ONION, THINLY SLICED
- 1/4 TEASPOON SALT
- DASH OF PERPPER
- 1/4 CUP OF FINE DRY BREAD CRUMBS, TRY ITALIAN IT GIVES IT A NICER TASTE.
- 1/4 CUP OF GRATED CHEDDAR CHEESE.
- REMOVE OUTER LEAVES AND STALKS FROM CAULIFLOWER. SEPARATE INTO FLOWERETS.
- STEAM CAULIFLOWER IN STEAMER OR BOIL LIGHT AND STRAIN WATER.
- HEAT OLIVE OIL IN SKILLET OVER MEDIUM HEAT.
- ADD SLICED ONION AND COOK, STIRRING OCCASIONALLY, UNTIL ONION IS TENDER AND LIGHTLY BROWNED. ADD SALT PEPPER ADN BREAD CRUMBS.
- REMOVE FROM HEAT.
- PLACE COOED CAULIFLOWER IN A SHALLOW, BUTTERED BAKING DISH. TOP WITH HOT ONION MIXTURE. SPRINKLE WITH GRATED CHEDDAR CHEESE.
- PLACE ON RACK ABOUT 4 INCHES FROM BROILER AND BROIL UNTIL CHEESE MELTS AND BROWNS LIGHTLY ON TOP.
- SERVE WITH MAIN COURSE.
