Apple - Pecan Quickbread
- 2 large eggs
- heaping 1/2 cup sugar
- 1 1/2 cups grated peeled apples, with juice (about two apples)
- 1 1/2 cups whole wheat flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 tsp. ground cinnamon
- scant 1/2 tsp. salt
- 5 tbsp. vegetable oil
- 1/2 cup coarsely chopped pecans
- Preheat oven to 350.
- Beat sugar and eggs in large bowl.
- Stir in apples.
- Let stand for ten minutes.
- Meanwhile, whisk together flour, baking powder, baking soda, cinnamon and salt.
- Stir oil and pecans into apple mixture.
- Add the flour mixture and stir until just combined. Do not overmix; the batter should not be smooth.
- Pour into greased bread pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before removing from pan.
