Black Bean Soup
- 4 slices of bacon or 1/2 cup of ham diced.
- 1 large onion, chopped
- 1 or 2 cloves of garlic, minced
- 2 cans of black beans about 15 ounces each, undrained
- 1 can of beef broth
- 1 1/4 cups of water
- 3/4 cup of your favorite picante sauce
- 1/2 teaspoons of salt or add a bit more for taste
- 1/2 oregano leaves, crushed
- Sour cream optional to top when finished.
- Cook bacon over medium-high heat in large sauce pan until crisp or cook diced ham in pan with 1 tsp of butter.
- Remove to paper towel, put aside
- Add onion and garlic to drippings cook and stir 3 min.
- Add beans, broth water, 3/4 cup picate sauce, salt and oregano.
- Cover simmer 20 minutes.
- Ladle into soup bowls add a spoon of sour cream to top with bacon or ham also to top garnish with green fresh basal (optional).
- Serve with picante crackers or crusty bread.
