Spinach Pie
- 9 inch unbaked pie crust
- 2 tbl olive oil
- 6 cloves garlic, minced
- 1 small onion, chopped
- 1 lb fresh spinach
- Salt & pepper
- 2 large eggs, beaten
- 1 cup half-&-half
- 1 tsp grated lemon zest
- 1 tsp chopped fresh thyme leaves
- 6 oz feta, crumbled
- 8 oz swiss cheese, grated
- 1. Preheat oven to 375 degrees. Place piecrust in pie pan and put pan on a rimmed baking sheet lined with foil.
- 2. In a medium skillet over medium heat, drizzle in olive oil. Add garlic & onion & saute until translucent, 5 - 7 minutes. Do not let garlic burn. Add spinach, a little at a time, & cook until wilted. Season with salt & pepper & let cool.
- 3. In a bowl, whisk eggs & half-&-half. Add lemon zest & thyme. Add spinach, feta & half the swiss cheese & mix until well combined. Season with salt & pepper.
- 4. Pour carefully into piecrust & sprinkle remaining swiss cheese evenly over the top.
- 5. Bake for about 40 minutes or until center is set. Cool at least 10 minutes before serving.
