St. Augustine Orange And Pineapple Pie

  1. Beat egg yolks in saucepan; mix sugar, cornstarch and flour. Add to egg yolks and beat until smooth.
  2. Place over medium heat and add orange juice, lemon juice and pineapple.
  3. Cook until thick, stirring constantly.
  4. I cook mine in microwave in 4-cup Pyrex measuring cup, about 9 minutes, 2 minutes at a time, on High.
  5. Cool and spoon into pie crust.
  6. Put in refrigerator until filling is cold, then put meringue, 3 egg whites and 6 tablespoons sugar on top and bake until golden brown.
