Chocolate Kahlua Cake
- 1 box devils food cake (easy on the added pudding)
- 1 small box chocolate pudding.
- 3/4 tsp Cinnamon.
- 1/4 tsp Salt.
- 3/4 C vegetable oil.
- 4 eggs.
- 1 c Sour Cream
- 1/2 C Kahlua.
- 1+ tsp Vanilla extract
- Handful or 2 Chocolate chips if desired.
- 1/4 c Sugar
- 1/4 C water
- 1/4 c Prepared Coffee or Espresso
- 1 T Kahlua
- 1/2 t Vanilla
- Powdered Sugar (about a cup, cup and a half)
- Milk, Cream, or water- for desired thickness
- Pinch of salt
- Kahlua for flavor
- In mixing bowl:
- Cake mix, pudding mix, cinnamon, salt.
- Mix with whip attachment for a few seconds to break up any lumps.
- Add oil, while mixing add eggs one at a time. Add sour cream, kahlua, vanilla.
- Mix until results in a thick, smooth creamy dreamy batter. Stir in chocolate chips if using.
- Pour into prepared Bundt pan, bake at 325 to 350 (depending on your pan and oven) for about 45 minutes. A skewer will come out clean..unless you hit a chocolate chip.
- Flip over onto cooling rack pretty darn close to immediately.
- Bring sugar and water to boil. Mix into prepared coffee, add Kahlua and vanilla. Using pastry brush 'baste' cake. Using as much or little syrup as desired. (for this, you could also make a simple syrup flavored with coffee/kahlua/vanilla)
- Make flat icing, pour/spoon over cake.
- Enjoy!
