Pumpkin Roll
- Cake:
- 2 eggs
- 2/3 cup pumpkin
- 3/4 cup sugar
- 1/2 tsp. cinnamon
- 3/4 cup flour
- 1 tsp. baking soda
- Filling:
- 2 tsp. margarine
- 6 oz. cream cheese
- 3/4 tsp. vanilla
- 1 cup powder sugar
- 1/2 cup cool whip
- Mix all cake ingredients! Spray Pam on 9x13 roll pan. Cover bottom of pan with wax/parchment paper. Spray paper with Pam. Spread mixture real thin. Bake 375 for 15 minutes. Flip onto a tea towel and peal paper off. Roll longwise in tea towel, folding the tea towel over the cake as you roll. Coll fir 1 hour in the refridgerator.
- Prepare filling.
- Unroll cale and fill with filling. Roll up cake agian longwise. Wrap it with foil and refridgerate for 1 hour.
- Serve & Enjoy!
