Minestrone Soup
- 1/2 lb. lean bacon, cut up
- 2 cans condensed onion soup
- 1 (1 lb. 13 oz.) can solid tomatoes, cut up (with juice)
- 1 c. diced carrots
- 1 c. diced potatoes (White Rose)
- 1 c. diced celery
- 1/2 lb. diced zucchini
- 1 small bunch parsley, chopped
- 1 bay leaf, crumbled
- generous pinches of thyme, marjoram and basil
- salt and pepper
- 1 clove garlic, minced
- 9 c. water
- 1 1/2 c. broken spaghetti, uncooked
- 1/4 c. grated Parmesan cheese
- 2 cans Seaside lima beans (1 lb. each)
- Combine all ingredients except spaghetti, beans and cheese. Bring to a boil. Simmer gently, covered, for 1 hour.
- Add spaghetti and cook for 30 minutes, stirring.
- Add beans and cheese.
- Makes a big pot.
