Tofu Scramble
- 4 packages extra firm tofu
- 2 packages gimme lean sausage style
- 1 large onion
- 8 tbs nutritional yeast
- 1/4 cup flour (wheat preferred) (optional, better for making breakfast sandwiches).
- 2 tbs tumeric
- 1 tbs salt
- 1 tbs black pepper
- 4 tbs olive oil
- 4 tbs bragg liquid amino acid
- 1/2 cup almond or soy milk
- 1/2 cup of water
- dice onion and place in large pan with 2 tbs olive oil over medium heat.
- slice or scoop out small pieces of gimme lean and place in pan. add 2 tbs bragg liquid amino acid for flavor and 1/2 cup of water to the pan as the gimme lean is low moisture.
- cover pan. as the mixture warms, use a spatula to chop into finer pieces to desired consistency, stirring every 5 minutes for approximately 15 minutes or until onions and gimme lean are slightly browned.
- drain excess water from tofu and place in a large (8 qt) mixing bowl.
- add remaining ingredients to mixing bowl, and mix with a fork. use fork to mash tofu down to desired consistency. a finer consistency works well for making a sandwich, courser is fine for eating the dish by itself.
- once gimme lean and onions are cooked, add them into the mixing bowl with tofu mixture and mix.
- add mixture to large pan over medium high heat. mix every 2-3 minutes for approximately 15 minutes or until desired consistency and color. may use multiple pans for fast cook time.
- serve stand alone or in a tortilla. tortillas freeze well for a quick or on the go breakfast.
