Refrigerator Rolls
- 1 cake yeast or 1 package dry yeast
- 1/2 cup lukewarm water
- 2/3 cup shortening
- 1/2 cup sugar
- 1 teaspoon salt
- 1 cup mashed potatoes
- 1 cup milk, scalded
- 2 eggs, well beaten
- 7 cups flour
- Preparation: 40 minutes (plus 2 hours rising time)
- Baking: 15 minutes Freeze: Yes
- Bake at 425u0b0 for 15 minutes.
- Dissolve yeast in lukewarm water. Let sit 10 minutes until frothy.
- Add shortening, sugar, salt, and potatoes to scalded milk.
- When cold, add yeast dissolved in water.
- Mix thoroughly and add eggs.
- Stir in enough flour to make a stiff dough. Knead well on a lightly floured surface. Place in large bowl, rub shortening over dough, and refrigerate.
- Before baking, let rise for 2 hours. Shape into desired size and bake.
- This recipe will keep for a week but is best on the second or third day.
