Pan-Fried Fish Fillets With Apple Mayonnaise
- 1/2 pound white fish (preferably orange roughy or grouper), cut into 2"x3" pieces
- 1 teaspoon dark soy sauce
- 1 teaspoon light soy sauce
- 1/2 cup corn starch
- vegetable oil
- 1 medium fuji apple, diced
- 1 teaspoonful apple juice concentrate or honey
- 4 tablespoon mayonnaise
- Prepare dipping sauce by mixing last 3 ingredients. Refrigerate.
- Wash and pat fish pieces dry.
- Mix dark and light soy sauce in medium dish. Add fish pieces and coat evenly.
- In a medium skillet, heat enough vegetable oil to coat the bottom of the skillet.
- Coat fish pieces with corn starch, shake off excess, and put into skillet one by one.
- Fry both side of fish fillets until full cooked.
- Serve fish fillets with dipping sauce.
