Chicken Love
- Whole chicken 5-12#
- Garlic 1 bulb
- Oinion 1 whl
- Orange 1 whl
- Lemon 1 whl
- Orange zest 1 tsp
- Lemon zest 1tsp
- Butter 1/2 c softened
- Thyme 1 bn
- Rosemary 1 tbl
- Salt & Pepper TT
- Kitchen twine as needed
- +Heat the oven to 350*F
- +Season the whole chicken with salt and pepper.
- +In a bowl mix together Orange and Lemon zest, 1/2 c Butter, Thyme, and Rosemary.
- +Cut Lemon, Orange, Garlic, and Onion in half.
- +Squeeze the lemon juice and orange juice inside of the chicken's cavity. Place the orange and lemon inside.
- +Add the Garlic and Onion to the cavity as well.
- +Carefull lift the skin from the breast and squeeze the butter mixture underneath.
- +Cover the rest of the chicken with the butter mixture.
- +Tie the chicken tightly together so it will cook evenly.
- +Roast the whole chicken in a roasting pan covered with foil tightly.
- +Roast the chicken for aprox. 1hr 20min-2hrs. depending on size.
- -Roast 5# for 1 hr
- -Roast 10# for 2 hrs
- -Roast 15# for 3 hrs
