Fruit And Nut Bars
- 1 1/2lbs dried fruit mixed (Ie: apricots, dried cranberries, dried cherries)
- 1 1/2 cup water
- 10 oz sugar
- 1/2 cup lemon juice
- 20 oz light brown sugar
- 14 oz flour
- 12 oz oats
- 1 teaspoon baking soda
- 1 teaspoon salt
- 20 oz melt unsalted butter
- 1 cup chopped walnuts
- Preheat oven to 350.
- Put the mixed fruit and water in a saucepan. Cook on medium heat for 5 minutes stirring frequently. Remove from heat, add lemon juice and sugar. Still well to combine and set aside.
- In a large bowl, mix remaining ingredients well.
- Line a 16 x 12 inch pan with parchment paper. Press 1/2 the mixture into the pan. Top with fruit mixture then crumble the remaining mixture over the fruit. Sprinkle with nuts and bake for 40-45 minutes. Let cool in pan for at least 1 hour in the refridgerator. Cut into bars, sprinkle with powdered sugar and serve
