Healthy Chicken Sausage Vegetable Barley Soup
- 1 quart Organic Beef Broth
- 1 quarts Organic Vegetable Broth
- 1 Organic Leek (chopped)
- 2 Organic Carrot (chopped)
- 1 Organic Zucchini (chopped)
- 2 Organic Celery (chopped)
- 1 cup Organic Barley
- 14.5 ounces Can of Organic Diced Tomatoes With Juice
- 15 ounces Can of Organic Great Northern Beans
- 8 ounces Chicken Sausage (chopped)
- 2 Organic Cloves of Garlic (chopped)
- 1 teaspoon Garlic Powder
- 1 teaspoon White Sugar
- 1 teaspoon Salt
- 3 Bay Leaves
- 1/2 teaspoon Ground Black Pepper
- 1 teaspoon Paprika
- 1 tablespoon Red Wine Vinegar
- 2 tablespoons Olive Oil
- In a separate pot, boil barley until nearly done. I buy Trader Joe's 10 minute.
- In a large pot, heat olive oil over medium heat and saute leeks and garlic until they are translucent and fragrant.
- Add carrots, celery & zucchini and saute for another 5 minutes .
- Add tomatoes, broth, all spices, Bay leaves & vinegar & bring to a slow simmer. Simmer for about 20 minutes
- In a separate pan, saute chopped sausage and cook until browned.
- Add sausage, barley & beans to pot & simmer together for an additional 10 minutes to slightly thicken and fully cook the barley.
