Pumpkin Cheesecake Bars
- 1 (16 oz.) pkg. pound cake mix
- 3 eggs
- 2 T. melted butter
- 4 tsp. pumpkin pie spice
- 1 (8 oz.)pkg. cream cheese, softened
- 1 (14 oz.) can Eagle Brand milk
- 1 (16 oz.) can pumpkin (2 C.)
- 1/2 tsp. salt
- 1 1/2 C. chopped pecans
- Preheat oven to 350 degrees. In large KitchenAid mixer bowl on low speed, combine cake mix, 1 egg, butter, and 2 tsp. spice. Press into the bottom anf 1/2 way upo sides of 9" X 13" pan sprayed with cooking spray.
- In same bowl, beat cheese until fluffy. Gradually beat in Eagle Brand, then remaining 2 eggs, pumpkin, remaining spice, and salt. Mix well.
- Pour over crust and top with chopped nuts. Bake 30-35 minutes or until set. Cool completely or chill. Cut into bars. Store covered in refrigerator.
