Asian Noodle Salad With Peanut Dressing
- Dressing
- 1 T low-sodium soy sauce
- 3 T peanut butter
- 2 T hoisin sauce
- 4 T hot water
- 2 T lime juice
- 1 t hot sauce
- Noodle Salad
- 1 package (8.8 oz.) soba noodles
- 1 c 2-inch-long thinly sliced zucchini spears
- 1 c matchstick - cut - carrots
- 1 c thinly sliced red bell pepper
- 1 c snow peas, ends trimmed
- 1/2 c chopped scallions, green parts only
- 1/2 c bean sprouts
- 1/2 c chopped cilantro
- In a blender, puree dressing ingredients until smooth. If mixture is too thick, thin with hot water, adding 1 t at a time.
- In medium pot, cook noodles in boiling water until tender about 5 min. About 30 sec. before removing noodles and zucchini and carrots. Drain rinse briefly in cold water and drain again.
- Place in large bowl. Add pepper, snow peas and scallions. Pour dressing over mixture & toss.
- Garnish with sprouts and cilantro
