Asian Noodle Salad With Peanut Dressing

  1. In a blender, puree dressing ingredients until smooth. If mixture is too thick, thin with hot water, adding 1 t at a time.
  2. In medium pot, cook noodles in boiling water until tender about 5 min. About 30 sec. before removing noodles and zucchini and carrots. Drain rinse briefly in cold water and drain again.
  3. Place in large bowl. Add pepper, snow peas and scallions. Pour dressing over mixture & toss.
  4. Garnish with sprouts and cilantro
