Lamb Burgers With Bell Pepper Relish
- For relish:
- 3/4 cup red wine vinegar
- 1/4 cup sugar
- 2/3 cup broth
- Lemon juice and zest
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 apple, cored, peeled, and sliced
- 1 onion, sliced
- 1/3 cup cranberries
- Dijon mustard
- Cayenne pepper
- Salt
- Fennel
- Honey
- Red pepper flakes
- For burgers:
- Bread crumbs
- 2 chopped scallions
- 5 cloves chopped garlic
- Chopped mint
- Ground lamb
- 1 egg
- Black pepper
- Worcestershire sauce
- Curry powder
- Cumin
- Coriander
- Chili powder
- Parsley
- Cardamom
- To serve:
- Feta cheese
- English muffins
- For relish:
- Bring vinegar and sugar to a boil. Stir until sugar is dissolved and then boil one minute. Add remaining ingredients. Bring to a boil, and then simmer 25 minutes.
- For burgers:
- Mix all ingredients in bowl and form into patties. Heat skillet 1 minute. Cook 4 minutes on each side, melting feta on top in final minute of cooking.
- Serve on toasted English muffins topped with relish.
