Your Not So Italian Grandmother'S Chicken
- -2 large bone in chicken breast
- -1/2 white onion quartered and thinly sliced
- -1/2 cup chicken broth
- -5 cloves garlic chopped
- -2 small tomatoes quartered into fours
- -2 tablespoons tomato paste
- -2 tablespoons chopped parsley
- -2 tablespoons olive oil
- -1 pad butter
- -1 pinch red chili flake
- -salt
- -ground black pepper
- -Preheat oven to 350 degrees.
- 1) Cut your chicken breast in half, making four pieces. Season both sides of the chicken in a pinch of salt and pepper.
- 2) In a heavy skillet, add olive oil, butter, onions, a pinch of salt, red chili flake and pepper on med/low heat. Stir for about 4 minutes, till onions are tender.
- 3) Add tomato paste and mix with onions for a minute more.
- 4) Add chicken breast, skin side down. On medium heat, rub the chicken with the tomato mixture in the skillet. Coating the chicken as it browns. 5 minutes for each side or till golden
