Your Not So Italian Grandmother'S Chicken

  1. -Preheat oven to 350 degrees.
  2. 1) Cut your chicken breast in half, making four pieces. Season both sides of the chicken in a pinch of salt and pepper.
  3. 2) In a heavy skillet, add olive oil, butter, onions, a pinch of salt, red chili flake and pepper on med/low heat. Stir for about 4 minutes, till onions are tender.
  4. 3) Add tomato paste and mix with onions for a minute more.
  5. 4) Add chicken breast, skin side down. On medium heat, rub the chicken with the tomato mixture in the skillet. Coating the chicken as it browns. 5 minutes for each side or till golden
